A few weeks ago, I posted a link from Bernice at the Living the Balanced Life talking about using routines to simply your life and improve productivity around the house. This summer one areas I have been struggling with is meal planning. Living in the South, this time of year, my crock pot recipes just don't hit the spot. All I really want is salad and ice cream!
I needed a little inspiration and organization. So, for week #6 of Tackle It Tuesday, I decided to revive my meal planning. Here's what helped me this week:
From life...your way: Home Management Notebook printables which include several different types of forms depending on your organizational style. Here I found a meal planning sheet, pantry inventory sheet, and shopping list sheet.
From my wonderful friend, Kristy, who had a wonderful idea to make mornings easier. At the beginning of the week, make a breakfast casserole that could be reheated on mornings through the week. This will allow my husband to go to morning Mass, have a hearty breakfast which He loves and not be rushed going to work. It also leaves me with less clean-up in the kitchen.
Here's the breakfast casserole recipe:
- 16 eggs
- 1 1/2 cup shredded cheese, your choice
- Filling of your choice: since my husband likes vegetables, and we have an abundance of them, I sautéed onions, peppers, and tomatoes. You can also use diced ham, or any other breakfast meat.
- Sprinkle with seasoning: I used Italian seasonings, and salt and pepper to taste.
Mixed all the ingredients into a large bowl, then pour into a greased 13 X 9 baking pan. Bake for 35-40 minutes in a 350 F degree oven. After cool, cut into meal-size pieces.
This morning, Rick warmed up a large piece the microwave for one minute and enjoyed a hassle free and healthy breakfast.

London Broil & Veggies Fajitas and Rice
(Light on the steak, heavy on the vegetables)
Tuesday
Sunday's leftovers
Wednesday
Beef & Veggie Stir-Fry (London Broil from Monday) and Rice
Thursday
Pasta with Marinara Sauce & Meatballs
Salad
Friday
Homemade Pizza and Antipasto Salad

I always plan my dinners, but never my breakfasts or lunches -- though I probably should. Your plan for dinner sounds delicious. The casserole sounds great too, although with the size of my family that would last one meal, not a week. Sigh.

My girls wont eat this because it has a little spice to it, however next week I am going to try ham and swiss cheese and see if they will go for it.
